Story: Mr. Harada is famous in Japan for his supersensitive palate that won him numerous awards for his abilty to taste and analyze sake. To create his complex and unique sake year-round, he leads a team of only four other people in a refrigerated facility that replicates year-round winter. The goal of making a sake with rice polished to 80%. Usually the taste would be heavy and very rich, however the brewer wanted to show that it's possible to make a fruity sake without polishing away majority of the grain.
