Vinified with 80-100+ year old vines from the traditionally grown rare Pedro Ximenez grape, the Legacy of Australia Pedro Ximenez xxxo is an exceptionally drinkable dessert wine. First fortified in 1944 and blended to be a 30-year-old in style (hence, xxxo), this dessert wine is medium amber in hue, with notes of walnuts, raisin, and butterscotch on the nose. On the palate, all the notes collide into a sensational mixture of sweet yet slightly savory, cut with a lively acidity that holds up with a lingering finish that goes for miles. Hand blended and with no filtration or fining, this wine is best enjoyed upon opening or within the week as either an aperitif, or as a dessert, but would also pair exceptionally well with cheeses such as cheddar and gruyere.
