Jacques Lassaigne "Vignes Montgueux" Blanc de Blancs is a rarity in Champagne in that it is organic and a "natural" Champagne. It is fermented with native yeasts and no added sulphur. Even the malo/lactic fermentation occurs naturally. The wine rests on its lees for at least two years yielding a creamy texture and fine bubbles. 100% Chardonnay.
